Dish of the Week: Smoky Black Bean and Mushroom Chilli

Smoky Black Bean and Mushroom Chilli

If you don’t like eating clean, healthy foods, then quite simply, you need to educate your palette. Open your mind to the endless choices of low calorie, protein fuelled, delicious dishes and not only will you never tire of eating well, your body will thank you in glorious ways. Of course, we fully endorse the odd cheese and bacon burger or a creamy carbonara, but we’ve put together a weekly food diary to fill up all of the delectable meals in between.  We’re starting with a smoky, spicy black bean and mushroom chill… this one is a belter, plus once you’ve got yourself a lovely little spice rack started, you don’t need a lot of ingredients to throw this together.

For 4 big boy portions

  • 400g of mushrooms
  • 2 red onions
  • 2 fresh chillies
  • 1 celery stick
  • 1 red pepper
  • 2 400g chopped/plum tomatoes
  • 1 400g black beans
  • 1 400g red kidney beans
  • 2 tsp dark soy sauce
  • 2 tsp balsamic vinegar
  • 1 tsp tomato puree
  • 5 garlic gloves
  • 2 tsp honey
  • Salt & pepper to taste
  • Olive oil
  • 1 tsp oregano
  • 1 tsp cinnamon
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chilli flakes
  • Rice to serve

Prep

  • Blitz in a food processor (or chop) the mushrooms into very small bits
  • Peel and finely chop the onions, garlic, chillies, celery and pepper
  • Drain your black beans and kidney beans
  • Mix together all of the spices (oregano, cinnamon, cumin, paprika and chilli flakes)

Cooking

  • Fry off your mushrooms in some oil, salt and pepper for 5 minutes, then set aside in a bowl whilst you cook the rest of the ingredients.
  • Using the same pan (adding a little more oil if necessary), fry off your onions and garlic until soft. Add the chilli, celery and pepper and continue to cook for 10 minutes.
  • Add your spice mix to the pan and stir thoroughly to coat all of the vegetables.
  • Next add in the chopped tomatoes, tomato puree, balsamic and soy sauce. Let it bubble away on a medium heat until the sauce has thickened.
  • Add the black beans and kidney beans into the pan, along with the honey and chopped mushrooms.
  • Cook for a further 10 minutes before serving with rice.
